It is perfect with seafood, grilled fish, goat’s cheeses such as Crottin de Chavignol, or dishes based on green vegetables.
Pouilly Fumé Les Cornets
Grown entirely on Kimmeridgian marl soils, this Pouilly Fumé takes its name from the locality where this unique plot is located.
Well-rounded with ripe fruit aromas. This cuvée reveals notes of white fruit, citrus and a subtle smoky note typical of the appellation. For a successful food and wine pairing, this Pouilly-Fumé goes perfectly with grilled fish or fish in a creamy sauce, seafood such as oysters, mussels or scallop carpaccio. Goat’s cheeses, a regional speciality, also bring out the wine’s elegant mineral and fruity notes. For an authentic experience, pair it with Crottins de Chavignol goat’s cheese.
Pouilly Fumé Auguste
Grown on 100% Villiers limestone soils, this Pouilly Fumé reflects the prestige of its small one-hectare plot.
This cuvée reveals a clear, bright, light yellow colour with golden highlights. The nose, more complex and deeper than the classic cuvée, combines notes of ripe citrus fruits, white-fleshed fruits and white flowers, as well as a beautiful smoky minerality typical of flint soils. On the palate, the wine is round and structured, with a precise and tense attack. Ageing on lees brings volume, an elegant chalky texture and good length. This wine has great ageing potential. Ideal with fish, white meats and fresh vegetables such as Crostinis à la crème de saumon, Pizza aux crevettes, pesto et chèvre or even Rôti de jambon laqué à l’orange et gingembre.
